I’ve been looking for a healthy and clean snack we can take with us on the go, packed with protein, and something the my three year old would enjoy. I pack snacks for every outing, ever. I like to be prepared with healthy options so we do not cave and grab things we’ll regret. Corbin has an obsession with chocolate granola bars. They’re great for on the go, but they can be packed with artificial ingredients, GMOs, and an excessive amount of sugar. I came up with my own easy to make protein snack bars. Simple and healthy.
2 cups of oatmeal
1 cup of Chocolate Shakeology
1/4 cup of all natural almond butter ( you can also use all natural PB, but make sure it’s all natural- it’s much better for you and has a thinner consistency )
1/4 cup of all natural honey
1/4 cup of sliced almonds
1/4 cup roasted sunflower seeds
1/4 cup of dark chocolate chips
1/3 cup of unsweetened apple sauce ( or you can use any fruit baby food puree, like PRUNES, you won’t be able to taste them)
1 tbsp unsweetened cocoa
1 tsp cinnamon
1 tsp vanilla extract
1-2 tbsp water( Do not add this until I tell ya)
In one medium sized bowl mix all of your dry ingredients together and set aside. In another bowl mix all of your wet ingredients( besides water) together and pop in the microwave for 30-60 seconds. Stir the wet ingredients until the chocolate is completely melted. Next, pour your wet ingredients in with your dry and stir until everything is blended well. It should be pretty sticky almost like a thick oatmeal cookie dough. If it still looks too dry , now is when you’ll add a bit of water, start with 1 tbsp and mix. Once it’s all mixed well, spread into a container of your choice. I used a 9 x 9 glass baking dish. Refrigerate for 30-60 minutes and thats it! Cut up into your desired size and viola!
When they’re done they’ll be more firm, but still a bit sticky.
